Quanto vivono i batteri nel congelatore?
Molti pensano erroneamente che molti batteri e virus vengono distrutti a causa del freddo, in realtà le cose non stanno in questo modo perchè è stato comprovato da svariate ricerche scientifiche che, molti di essi sono in grado di sopravvivere anche a temperature rigide.
Tuttavia sussiste l'altro lato della medaglia: la maggior parte non è in grado di proliferarsi perchè il freddo blocca la loro riproduzione.
La Listeria è tra i pochi batteri che riesce a moltiplicarsi, per questa ragione è molto importante conservare correttamente gli alimenti nel congelatore e poi consumarli con tutta sicurezza.
Come hanno spiegato gli esperti, la Listeria resiste alle basse temperature ma si rivela innocua con la cottura. Questo agente patogeno si può trovare in svariati cibi, non solo nelle verdure surgelate ma anche in quelle fresche, nei formaggi a pasta molle, nel pesce affumicato.
Quali sono gli accorgimenti da prendere in seria considerazione per evitare di contrarre la Listeria?
Gli esperti sconsigliano di cuocere gli alimenti surgelati nel microonde perchè la distribuzione del calore è pressocché irregolare, questo significa che in alcuni punti il cibo sarà caldo in altri no, quindi il batterio non sarà definitivamente annientato.
In aggiunta, è necessario evitare di scongelare le verdure in frigorifero soprattutto se sono presenti altri cibi, il rischio di contaminazione può rivelarsi molto alto qualora l'agente patogeno fosse presente.
